What is IQF?
IQF stands for "Individual Quick Freezing." It is an industrial freezing method that rapidly freezes food products individually, without them sticking together, in a very short time.
The fundamental difference from conventional bulk freezing is that in IQF systems, each product piece is frozen separately. This means products can be easily separated during storage and use, with no clumping.
How Does IQF Work?
In IQF systems, products travel on a conveyor belt exposed to high-velocity cold air flow. The process occurs in two stages:
- Crust Freezing: The outer surface of the product freezes very rapidly. This stage prevents products from sticking together.
- Core Freezing: The interior of the product is also completely frozen, reaching the target temperature of -18°C to -40°C.
IQF vs. Conventional Freezing
In conventional (bulk) freezing, products freeze slowly. Large ice crystals form and pierce cell walls, resulting in loss of texture, color, aroma and nutritional value after thawing. IQF technology forms small ice crystals through rapid freezing, preserving cell structure and delivering near-fresh quality after thawing.
